Method
 

  1. Mix the sugar with lemon juice in a small bowl until the sugar dissolves completely, creating a simple syrup.
  2. Pour the chilled champagne into a blender, then add the simple syrup for a touch of sweetness.
  3. Add a handful of frozen ice cubes to the blender to help create a thick, slushy texture.
  4. Pulse the blender gently, blending just until the mixture turns icy and slightly frothy, about 15-20 seconds.
  5. Check the consistency — it should be smooth, cold, and granular with tiny bubbles appearing throughout.
  6. Pour the champagne slushie into chilled glasses, garnishing with a twist of lemon or a sprig of mint if desired.

Notes
