- Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
- In a large mixing bowl, combine the peanut butter and honey. Stir well until the mixture is smooth and creamy, releasing a sweet, nutty aroma.
- Add the vanilla extract to the peanut butter mixture and stir to incorporate.
- Fold in the oats, mixing thoroughly until evenly coated and the mixture starts to come together.
- Stir in the mini chocolate chips, distributing them evenly throughout the mixture.
- Transfer the mixture into the prepared baking pan and press it down firmly with the back of a spoon or spatula, creating an even layer.
- Bake in the preheated oven for about 15-20 minutes, or until the edges are golden brown and the mixture is set.
- Remove from the oven and allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Once cooled, cut into bars or squares of your desired size.
