Ingredients

  • 8 pieces mozzarella balls firm, fresh mozzarella
  • 8 pieces cherry tomatoes ripe and shiny
  • 8 leaves fresh basil small leaves
  • 8 slices black olives pitted and sliced thin
  • as needed balsamic glaze thick and shiny

Equipment

  • small skewers or toothpicks
  • Sharp Knife
  • Small spoon or squeeze bottle
  • Serving platter

Method

  1. Gather all your ingredients: mozzarella balls, cherry tomatoes, basil leaves, black olives, and balsamic glaze.
  2. Slice the mozzarella into small, round disks about 1 cm thick, creating tiny 'eyeballs.'
  3. Place a mozzarella disk onto a toothpick or small skewer, ensuring it feels firm but not rubbery.
  4. Add a cherry tomato next, pushing it gently onto the skewer to sit snugly against the mozzarella.
  5. Place a small basil leaf atop the cherry tomato, adding a splash of green for contrast.
  6. Top the basil leaf with a thin slice of black olive to create the 'pupil' of the eyeball, pressing gently to secure.
  7. Repeat these steps to assemble all 8 eyeball bites, arranging them on a serving platter.
  8. Use a small spoon or squeeze bottle to drizzle a generous amount of balsamic glaze over the assembled bites, creating a glossy, sinister shine.
  9. Optionally, add some red pepper slivers for extra gore, arranging them around the eyeballs for added drama.
  10. Serve immediately to enjoy the fresh, light texture and spooky visual impact of these creepy eyeball bites.
