  • 1 cup dried brown or green lentils rinsed
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1 can (14 oz) crushed tomatoes or tomato sauce

  1. Rinse the lentils under cold water until the water runs clear, then combine them with vegetable broth in a saucepan. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender and most of the liquid is absorbed. Drain any excess liquid and set aside.
  2. While the lentils cook, heat olive oil in a large skillet over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until it becomes translucent and fragrant.
  3. Add the minced garlic to the skillet and cook for another 30 seconds until it releases a delicious aroma. Stir in smoked paprika and cumin, letting the spices toast slightly for about 1 minute.
  4. Pour in the crushed tomatoes, stirring to combine everything evenly. Let the mixture simmer for 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  5. Add the cooked lentils to the skillet, stirring well to coat them in the tomato sauce. Season with salt and pepper to taste, then simmer for another 5-10 minutes until heated through and flavors are well combined.
  6. While the lentil mixture simmers, split open the hamburger buns and toast them lightly until golden and crisp, either in a toaster or in a hot skillet.
  7. Once everything is ready, spoon a generous amount of the hearty lentil sauce onto the toasted buns, ensuring they’re nicely topped and overflowing with the flavorful filling.
