- Rinse the lentils under cold water until the water runs clear, then combine them with vegetable broth in a saucepan. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender and most of the liquid is absorbed. Drain any excess liquid and set aside.
- While the lentils cook, heat olive oil in a large skillet over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until it becomes translucent and fragrant.
- Add the minced garlic to the skillet and cook for another 30 seconds until it releases a delicious aroma. Stir in smoked paprika and cumin, letting the spices toast slightly for about 1 minute.
- Pour in the crushed tomatoes, stirring to combine everything evenly. Let the mixture simmer for 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- Add the cooked lentils to the skillet, stirring well to coat them in the tomato sauce. Season with salt and pepper to taste, then simmer for another 5-10 minutes until heated through and flavors are well combined.
- While the lentil mixture simmers, split open the hamburger buns and toast them lightly until golden and crisp, either in a toaster or in a hot skillet.
- Once everything is ready, spoon a generous amount of the hearty lentil sauce onto the toasted buns, ensuring they’re nicely topped and overflowing with the flavorful filling.
- Serve the lentil sloppy joes immediately, with optional toppings like pickles, shredded cheese, or a squeeze of lemon for extra brightness. Enjoy the comforting, nourishing flavors!
Notes
For extra flavor, add a splash of hot sauce or vinegar to the sauce. These sloppy joes refrigerate well and make great leftovers for the next day.
