Ingredients

  • 4 tablespoons butter plus extra for greasing
  • 4 cups mini marshmallows or giant marshmallows for extra stretch
  • 6 cups rice krispie cereal regular or gluten-free
  • 1/2 cup chocolate chips optional, melted or sprinkled
  • as needed sprinkles or candies for decoration
  • 1 teaspoon vanilla extract vanilla extract brightens the flavor
  • a pinch sea salt to enhance flavors

Equipment

  • Large saucepan
  • Rubber spatula
  • 9x13-inch pan
  • Parchment paper or parchment-lined pan

Method

  1. Grease your pan with butter and line it with parchment paper to prevent sticking.
  2. In a large saucepan over medium heat, melt the butter until it smells rich and nutty, about 2 minutes.
  3. Add the marshmallows to the melted butter and stir constantly, watching them crackle and melt into a glossy, oozy mixture, about 3-5 minutes.
  4. Once the marshmallows are melted smoothly and begin to bubble, remove the pan from heat and stir in the vanilla extract and a pinch of sea salt.
  5. Pour the cereal into the marshmallow mixture quickly and fold together with a spatula until each piece is coated in a shiny, sticky glaze, about 2 minutes.
  6. Transfer the sticky mixture into your prepared pan, pressing it down gently with a greased spatula or parchment paper to shape it into a rough, uneven treat.
  7. Sprinkle on chocolate chips, candies, or sprinkles immediately while the mixture is still warm and sticky for a colorful, playful look.
  8. Let the treats sit at room temperature for 15-20 minutes until they are firm enough to cut but still slightly sticky and gooey inside.
  9. Cut into irregular monster-sized chunks or squares, enjoying the messy, chewy texture and vibrant appearance.
  10. Serve immediately or store in an airtight container to keep the treats sticky and fresh, with a slice of bread if needed to retain moisture.

Notes

Feel free to customize with your favorite toppings or add extra marshmallows for more gooey goodness. The key is to work quickly once the marshmallows are melted so everything stays sticky and manageable.
