Ingredients

  • 5 cups ripe peaches, sliced peeled and pitted
  • 1 tablespoon granulated sugar
  • 1 teaspoon cinnamon ground
  • 1 cup rolled oats old-fashioned preferred
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar brown or white
  • 1/2 cup unsalted butter cold, cubed
  • 1/2 cup toasted almonds, chopped
  • 1 pinch salt

Equipment

  • 9-inch baking dish
  • Mixing bowls
  • pastry cutter or fingertips
  • Baking sheet

Method

  1. Preheat your oven to 375°F (190°C). In a large mixing bowl, toss sliced peaches with sugar and cinnamon until evenly coated. Spread the peaches evenly into your baking dish.
  2. In a separate bowl, combine oats, flour, sugar, and a pinch of salt. Mix well to distribute the dry ingredients evenly.
  3. Add cold, cubed butter to the dry mixture. Use a pastry cutter or your fingertips to cut in the butter until the mixture resembles coarse crumbs with some pea-sized bits.
  4. Stir in the toasted almonds to add crunch and a nutty flavor to the topping.
  5. Sprinkle the crumb mixture evenly over the peaches in the baking dish, pressing lightly to create an even layer.
  6. Place the dish into the preheated oven and bake for about 40 minutes, until the topping is golden brown and bubbling around the edges.
  7. Remove from oven and let cool for a few minutes before serving. The aroma of baked peaches and toasted almonds will fill the kitchen, signaling it’s ready to enjoy.

Notes

For added richness, stir a vanilla bean into the fruit filling before baking. Keep an eye on the topping to prevent over-browning; cover with foil if necessary. Serve warm with a scoop of vanilla ice cream for extra indulgence.
