- In a mixing bowl, combine the rolled oats, pumpkin puree, cinnamon, nutmeg, salt, and honey. - Pour the milk into the bowl and continue to stir until everything is thoroughly combined and the mixture appears creamy.1 cup milk
- Give the mixture a final stir to make sure all ingredients are evenly incorporated and no dry oats remain.
- Transfer the mixture into a jar or airtight container, smoothing the surface with the back of a spoon.
- Seal the container and place it in the refrigerator overnight, or at least 6 hours, to allow the oats to soak and soften.
- The next morning, give the oats a gentle stir and check the consistency—if they’re too thick, splash in a little extra milk and stir again.
- Serve the pumpkin spice overnight oats in bowls, optionally topping with nuts, seeds, or a drizzle of honey for extra flavor and texture.
Notes
Feel free to customize with additional toppings or adjust spice levels to suit your taste. For a creamier texture, use thickened milk or add a dollop of Greek yogurt before serving.
