Ingredients

  • 1 cup rolled oats preferably old-fashioned
  • ½ cup pumpkin puree canned or homemade
  • 1 cup milk dairy or plant-based
  • 1 tsp cinnamon ground
  • ½ tsp nutmeg ground
  • 2 tbsp honey or maple syrup for sweetness
  • pinch salt optional, enhances flavor

Equipment

  • Mixing bowl
  • Spoon
  • Jar or airtight container

Method

  1. In a mixing bowl, combine the rolled oats, pumpkin puree, cinnamon, nutmeg, salt, and honey. Stir well until the mixture is evenly blended and the oats are coated with the pumpkin and spices.
1 cup rolled oats, ½ cup pumpkin puree, 1 tsp cinnamon, ½ tsp nutmeg, 2 tbsp honey or maple syrup, pinch salt
  2. Pour the milk into the bowl and continue to stir until everything is thoroughly combined and the mixture appears creamy.
    1 cup milk
  3. Give the mixture a final stir to make sure all ingredients are evenly incorporated and no dry oats remain.
  4. Transfer the mixture into a jar or airtight container, smoothing the surface with the back of a spoon.
  5. Seal the container and place it in the refrigerator overnight, or at least 6 hours, to allow the oats to soak and soften.
  6. The next morning, give the oats a gentle stir and check the consistency—if they’re too thick, splash in a little extra milk and stir again.
  7. Serve the pumpkin spice overnight oats in bowls, optionally topping with nuts, seeds, or a drizzle of honey for extra flavor and texture.

Notes

Feel free to customize with additional toppings or adjust spice levels to suit your taste. For a creamier texture, use thickened milk or add a dollop of Greek yogurt before serving.
